Easy Peanut Butter Easter Eggs

This is Munchkin's mom.  I wanted to make some peanut butter eggs, but I wanted it to be an easy, quick recipe that the kids could help with.  So I took a really delicious, fancy-looking recipe, and simplified it a TON:

Mix together equal parts peanut butter and powdered sugar.  Take the mixture and roll it into bite-sized balls, then lay them on wax paper and put them in the freezer for 30 minutes.

When it's about time to take that peanut butter out of the freezer, mix some semi-sweet chocolate chips with a teeny bit of shortening, and microwave to melt.  (When you microwave, only cook it in 30 second intervals and stir to avoid burning).  When it's melted, dip and coat the peanut butter balls, and if desired, sprinkle with candy sprinkles.  


Stick them in the fridge until you're ready to serve!
